Vegan Apple Pie Donuts

These donuts are a yummy way to start your day. Or finish it. Last night I tried out a new creation (which I’ll share on here soon) and I was so nervous about it turning into a disaster that I whipped out some donuts so that my friends would be able to eat them if the main course was bad. Turns out they ate everything and loved it! It was a fun night full of good food and better company. Just the way I like it!

These donuts were inspired by the meager sweets-content of my fridge and pantry, but I think they turned out great. They’re a fun way to get some fruit in for the day (and yes, maybe a litttlleee sugar!) And bonus, they’re vegan! I’m pretty sure you could easily make them gluten-free too by just subbing the flour.

So, without further ado, spend a quick 30 minutes making these donuts. I promise your taste buds will love you for it. And your family or friends (it made my apartment smell heavenly).

Vegan Apple Pie Donuts with Vanilla-Cinnamon Glaze

Ingredients (for donuts)

1 1/2 cups all-purpose flour

1 apple, pureed in a food processor

2 teaspoons almond milk

1/4 cup brown sugar

1/4 cup gingerale

1 teaspoon baking soda

1/2 teaspoon baking powder

2 teaspoons cinnamon

Ingredients (Vanilla-Cinnamon Glaze)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 tablespoon almond milk (add slightly more or less depending on desired consistency)

How To

1. Cut an apple in half and put both halves into a food processor. Blend the apple until it is in very small chunks, or pureed.

2. Put all ingredients for the donuts in a large mixing bowl and mix them well. I used my hands because the dough was pretty sticky, so use whatever method you feel most comfortable with! Preheat the oven to 350 degrees.

3. Bake the donuts for 15 minutes. While they cool, put the ingredients for the glaze into a small bowl and mix them up. You may want to put the glaze in the fridge for a couple minutes if you want to get a slightly thicker consistency without adding more sugar.

4. Cool the donuts and remove them from the pan. Then dip the donuts into the glaze. If there’s any left over, drizzle some more on top of the donuts! Then, pour yourself a piping hot cup of coffee or maybe a chai tea with some milk (my current favorite) and enjoy your apple-pie-in-the-sky morning!
